SIMPLE: Creamy Chicken Afritada | Chicken in tomato sauce with carrot, potatoes, bell pepper and cheese
Chicken Afritada is another popular Filipino dish using tomato sauce. Chicken parts such as thigh, legs or breast part are cooked in tomato sauce together with carrots, potatoes and green and red bell peppers. Another savory dish you can try this quarantine time.

Creamy Chicken Afritada
Ingredients:
- 1 kg chicken
- 5 cloves garlic (minced)
- 2 red onions
- 1 big potato
- 1 big carrot
- 2 big bell peppers
- 1 tsp brown sugar
- 1/2 tsp freshly ground pepper
- 1 1/2 cup tomato sauce
- 2 bay leaves (laurel)
- 8 g seasoning granules
- 1/4 cup olive oil (any cooking oil will do)
- 1 1/2 cup water
- 165 g cheese (grated)
- 1 tbsp tomato sauce
Procedure:
- In a hot pan, pour cooking oil.
- Saute bell pepper until starting to caramelize, then set aside.
- Saute cubed potatoes and carrots until translucent then set aside.
- In the same pan, saute garlic and onions.
- Add chicken and cooked for 5 minutes or until fat is rendered.
- Add seasoning granules, fish sauce and black pepper.
- Add tomato sauce.
- Add water and bay leaves, cover and wait for 7 minutes or more.
- Add brown sugar.
- Add cooked potatoes and carrots.
- Add cheese.
- Cook for 3-5 minutes.
- Continue stirring.
- Add half of the cooked bell pepper
- Serve hot.
