How to Cook Beef and Ox Tripe Kare Kare
One of the famous recipes in the Philippines is Kare kare. It is usually composed of vegetables such as string beans (sitaw), pechay, eggplant (talong), banana heart (puso ng saging); meat such as beef, ox tripe, pork, chicken or seafoods such as clams, shrimps, squids, etc.; and peanut butter which is the main ingredient of the recipe. This is also best served with shrimp paste or bagoong (binagoongan).
For those who are business minded this is one of the most ordered in the menu. In this episode you will learn how to cook kare kare using beef and ox tripe.
Beef and Ox Tripe Kare Kare
(Kare kareng Baka at Libro o Tuwalya)

Ingredients:
- 1 kg beef (pressure cooked for about 20 minutes or more
- seasoned with 1/2 tsp fish sauce)
- 3/4 kg ox tripe ((pressure cooked for about 40 minutes or more
- seasoned with 1/2 tsp fish sauce and 1 beef cube (optional))
- 4 cups ox tripe and beef stocks
- 1/8 cup cooking oil
- 1 onion
- 4 cloves garlic
- 1 1/2 cup pure peanut butter
- 60 grams kare kare mix (dissolve in warm water)
- 1 tsp sugar
- 1 tsp fish sauce
- 8 g seasoning granules
- 1 beef cube
- pechay
- string beans
- eggplant
Procedure:
A. Cooking Ox Tripe (Libro o Tuwalya ng Baka)
- Clean the ox tripe.
- Cook in a pressure cooker for 50 minutes or more.
- Set aside when desired tenderness is achieved.
- Set aside also the stocks
B. Cooking Beef (Baka)
- Clean the beef.
- Cook in a pressure cooker for 20 minutes or more.
- Set aside when desired tenderness is achieved.
- Set aside also the stocks.
C. Cooking the vegetables
- Clean the vegetable.
- Cut the eggplants lengthwise, see the vid.
- Cut the pechay into two, see the vid.
- Cut the string beans about 3 to 4 inches long.
- cut other ingredients.
D. Cooking Kare Kare Stew
- Add cooking oil on a pan.
- Saute garlic and onions.
- Add the cooked beef and ox tripe.
- Add 4 cups of stocks (beef and ox tripe)
- Bring to boil.
- Add the diluted kare kare mix.
- Add 1 1/2 cup pure peanut butter.
- Add fish sauce, then sesame oil, and beef cube.
- Continue cooking until the liquid is reduced.
E. Serving
- On a serving bowl, pour some kare kare stew.
- Top cooked vegetables.
- Serve with shrimp paste (bagoong)
Note: Do not mix the kare kare stew and vegetables when not ready to eat to prolong the lifespan of kare kare.
