Brazo de Mercedes | Meringue with Custard Filling | Pang Negosyo Recipe

Brazo de Mercedes is a recipe under sweets and desserts and is a traditional Filipino meringue roll with a custard filling typically dusted with confectioners' sugar. It is a type of pianono which is also a popular Filipino bread. Brazo de Mercedes is considered as one of the most popular Filipino favorites. It is usually composed of eggs, cream of tartar, sugar, condensed milk, vanilla and butter.

INGREDIENTS
Meringue:
  • 12 egg whites
  • 1/2 tsp cream of tartar
  • 3/4 cup sugar
Custard Filling:
  • 12 egg yolks
  • 1 tsp vanilla
  • 1 can condensed milk
  • 2 -3 tbsp butter
Procedure:
Meringue:
  1. Separate egg whites from egg yolks.
  2. Beat egg whites using electric mixer.
  3. Add the 1/2 tsp cream of tartar to stabilize egg whites.
  4. Add vanilla.
  5. Gradually add 3/4 cup sugar.
  6. Continue mixing until achieving stiff peaks.
  7. Prepare the baking pan, put wax paper on the baking pan and brush or spray with cooking oil to prevent sticking.
  8. Transfer the meringue in a baking pan
  9. Spread the meringue evenly.
  10. Style the meringue using fork, please see the video.
  11. While styling, pre-heat the oven until reaches 175 °C.
  12. Bake the meringue at 175 °C for about 20 minutes.
Custard filling:
  1. While cooking the meringue, let's cook the custard filling.
  2. In a pan, add 12 egg yolks, condensed milk, vanilla and butter.
  3. Make sure that your burner is at low heat.
  4. Continue stirring until the mixture is thick.
Assembly:
  1. Take out the meringue from the oven.
  2. Let it rest for 5 to 7 minutes until swelling is reduced.
  3. Sprinkle the meringue with confectioners' sugar.
  4. Cover the meringue with wax paper then flip.
  5. Remove the wax paper.
  6. Spread custard filling evenly.
  7. Roll the meringue.
  8. Cut both ends to make your roll more presentable.
